Glossary

Asiago: Hard pale yellow cheese, used grated.

Bahn Pho: Thai flat rice noodle, used for Pad Thai.

Basmati Rice: Aromatic long grain rice.

Bean Curd: Firm Custard-like squares made from soybeans and sold packed in water; tofu.

Black Mushrooms: Strong flavored - must be soaked in warm water for half an hour to soften before Using.

Capers: Green berries from caper trees, pickled and used as seasoning or garnish.

Cardamom: Sweet aromatic seed used ground, for seasoning.

Cassava: A starchy root; the source of tapioca.

Castor Sugar: Fine granulated white sugar.

Chapati: Similar to pita bread but cooked on a non-stick fry pan.

Chickpea Flour: A soft flour made from dried chickpeas; available in oriental grocery stores, or bulk  health food stores.

Chutney: Spiced, sweet and tangy vegetable and/or fruit relish.

Cilantro: Coriander leaves.

Coconut Milk: Not to be confused with cream of coconut, used in Pina Coladas.

Coriander: A distinctive flavored seed used as a curry seasoning or on it's own; also used in leaf form.

Cornflour: Cornstarch.

Cumin: Strong, pungent flavored seed, used on it's own or as a main ingredient in curry powder.

Curry Powder: Mixture of many spices; may include coriander, cinnamon, chilies, Cayenne pepper, cloves, cumin, cardamom, saffron, mustard seed, nutmeg, turmeric, ginger. 

Dried Shrimp: Available in Oriental grocery stores, either whole or powdered.

Flour: Unless otherwise stated, use all-purpose.

Garam Masala: Fragrant spice mixture, used for Indian cooking.

Light Soy Sauce: Light in color only, used mainly for marinade; DO NOT CONFUSE WITH "Lite" SOY SAUCE.

Macapuno: Brand name for a shredded, sweetened coconut, available in oriental grocery stores. Dried shredded coconut cannot be substituted.

Nuon Mam: Strong flavored, salted, fermented fish sauce.

Nam Pla: See Nuon Mam.

Oyster Sauce: Thick, mild flavored sauce, made from oyster extract, salt and starch; used as a seasoning or dip.

Pesto: A sauce of fresh basil, olive oil, cheese and pine nuts.

Provolone: Firm, creamy-white, (sometimes) smoked cheese.

Raita: Yogurt based salad, used as a side dish with spicy curries.

Sesame Oil: Used for flavoring; NOT cooking oil.

Short-Grain Rice: Yields a soft sticky product when cooked.

Sugar: Unless otherwise stated, use white granulated.

Tamarind: A sweetart fruit; the strong tasting juice from the pulp is used for cooking; also the base ingredient for Worcestershire sauce.

Turmeric: Adds color to dishes; gives curry powder it's bright yellow color.

Wheatmeal: Whole-wheat flour.

Wine: Use same wine as you would drink. "Cooking" wine or sherry has salt added.

Tofu

Long a mainstay of vegetarian and Asian diets, tofu is growing in popular appeal as people become more aware of the link between diet and good health. Made form soy beans, tofu is low in saturated fat, cholesterol-free, and an excellent source of protein and calcium. It is also extremely versatile and can be served on its own, or as a main food ingredient in recipes calling for meat, poultry, eggs, or dairy.

I Love Rainbow is pleased to present this selection of favorite recipes from around the world. Try them as they are, or add variations according to your taste. Substitute tofu in your own recipes, or create entirely new ones!

Tips on buying, storing, and handling tofu

Tofu is found in the produce sections or dairy coolers of supermarkets, natural food stores, and grocery stores. Tofu is perishable and should be kept refrigerated. Check the "Best Before" date on the packages.

Refrigerate after opening. For Extra Firm, Firm, Medium Firm, and Savory Garden Herb Tofu - immerse in fresh tap water in a covered container. Change the water daily. Tofu will stay fresh for up to five days. For Medium Firm Tofu - drain water after opening. Rinse and pat dry. Strain excess moisture through a cheesecloth or let sit in a colander for 10 - 15 minutes before using. Tofu can also be frozen. Thaw at room temperature or immerse in boiling water before using. When thawed, tofu turns creamy beige in color, and becomes firmer and more meat-like in texture. Frozen tofu keeps indefinitely.

Cooking with eggs

Eggs are considered a "nutrient-dense" food. (That's a compliment by the way.)

A serving of 2 large eggs is an excellent source of protein, riboflavin and vitamin B12, and a good source of vitamin A, folacin and phosphorus.

A large gee has only 75 calories. Only 1.5 grams of saturated fat (5 grams of total fat).

You'll find eggs are excellent in sauces or as a binder in your recipes.

When cooking eggs use moderate heat for a short period of time.

Eggs and Cholesterol

Since eggs contain cholesterol, they were once thought to raise blood cholesterol levels which is a heart health concern. Recently, a number of studies have revealed that this is not the case.

Saturated fat in the diet has a much greater role in raising blood cholesterol levels than dietary cholesterol found in food.

Two recent studies show that healthy individuals can eat up to 2 eggs a day while on a low-fat diet without a significant increase in blood cholesterol levels.

The liver makes about 80% of the cholesterol the body needs. The other 20% comes from food we eat. Generally, the liver compensates for dietary cholesterol intake by producing less cholesterol itself.

Reducing the amount of saturated fat in your diet is one of the most important steps in controlling blood cholesterol levels.

Egg Facts

Purchase only clean, uncracked, refrigerated eggs.
Refrigerate eggs as soon as possible after purchase. Store them in their carton to prevent moisture loss and odor absorption.
The "best before" date indicates the time the eggs will maintain Grade A quality. If you use them after that date they are better for baking, scrambling or hard-cooking rather than frying or poaching.

Cooking with milk

Milk makes soup creamier, sauces smoother and casseroles more moist. (It also goes great with oatmeal cookies, but that's another story.)

Milk should be heated gently and slowly; excessive heat can result in a scorched flavour.

Add powdered milk to batter for muffins, pancakes, cakes and breads to improve their texture and nutrient content.

Milk Facts

When shopping always pick up your milk last so it will stay cold as long as possible.
Store your milk on the refrigerator shelves rather than in the door.
Leave milk in its original container.
Keep milk away from strong smelling foods.
Remember that exposing milk to light destroys its riboflavin content and can cause it to taste "off".

Cooking with pork

Bacon goes well in hearty chowders, pancakes and waffle batters and in quick breads and muffins.

Serve pre-cooked hams chilled or heated. Heat hams at 350 F (180 C) for about 30 minutes per kg. Trim any visible fat before serving.

Pork roasts are done when the juices run clear with no hint of pink when cut.

Pasta and Noodles

There is no such thing as bad pasta. Some of it is just better than others. Some authorities credit the Chinese for the development of pasta; while they have produced and consumed noodles for centuries, most culinary scholars agree that pasta as we know it originated in Naples, Italy. The exact era is unknown. The general term 'Pasta' has wide and diverse applications; it refers primarily to an extremely nourishing farinaceous food comprised of semolina meal ground from hard, durum wheat and mixed with various liquids, eggs, oil and/or water. After kneading, this basic dough is then formed into macaroni, the parental name for the entire family of pasta which includes spaghetti (which means 'little chords'), vermicelli (which means 'little worms'), lasagna, linguini, fettuccine, penne, canelloni and literally hundreds of other uniquely diversified shapes.

The markets are well stocked with a seemingly endless variety of pasta. They are all good, (just make sure the package states "made with 100% semolina/durum wheat".

Pizza

To an Italian, a pizza is a pie - savory or sweet, open or covered, with a base of pastry or bread dough. We take the word pizza to mean a flat, round, open pie. But however it is defined, a pizza makes an economical and filling meal, and gives the cook the opportunity to experiment with whatever toppings imagination suggests.

Of the many variations of pizza, the best known is Neapolitan, which has a topping of tomatoes, anchovies, black olives and Mozzarella cheese on a bread dough base. You will find this in every pizzeria, or 'pizza parlor', where it may even be cooked in a traditional brick bread oven. You'll find it, too, in the supermarket in packaged pizza mixes or frozen, ready for reheating. But making a pizza at home is no trouble, whether it be on a bread, scone (biscuit) or pastry base, and it's certainly less expensive than buying someone else's effort. After all, the pizza came about as a method of using up leftover bread dough to make a cheap meal.

Homemade pizzas on a yeast dough base, baked or unbaked, can be frozen successfully for up to 1 month. Add the topping, checking first that all ingredients are suitable for freezing (anchovies become too strong during freezing so should be added when reheating), then open (flash) freeze before wrapping in freezer foil or a freezer bag. Bake the pizza from frozen in a preheated moderately hot oven (200 degree C/400 degree F, Gas Mark 6) for about 20 minutes for a baked pizza, and 30 to 35 minutes for an unbaked pizza.
